Where there is access to the ocean, wild-caught fish are usually put on ice immediately and later transferred to retailers who place the chilled fish straight into their own iced-loaded displays.
Here in land-locked Rwanda on the other hand, consumers have had to settle for imported frozen fish from the greater region or from Asia.
You cannot smell a frozen fish picked out of a shop's freezer until you take it home and thaw it out. Then its too late. Very often the cold chain was not end-to-end and the fish is partly putrified.
